It's no secret that we are fan of Luis's coffees. His love for fermentation and high quality cherries is something you taste throughout all his lots. This double fermented honey processed lot named 0306 is a well structured Pink bourbon with botanical elegance.
After picking the ripest drupes and hand selecting them this Pink Bourbon variety
passed through a fermentation stage in an anaerobic environment in drupe, then pulped and again a stage of fermentation in sealed barrels inoculating lactic bacteria from a previews Geisha fermentation.
14 days parabolic sun dryer, then it was stabilized during 3 months in a temperature controlled room the lot size was 190kg.
