The El Yllape farm, located in the Querocotillo district, benefits from a cool climate and ideal altitude that create a perfect environment for the cultivation of high-quality coffee. Throughout the year, moderate temperatures and well-distributed rainfall allow the plants to flower and mature slowly, resulting in more aromatic beans with exceptional flavor complexity.
The soil of El Yllape also plays a fundamental role. Rich in nutrients thanks to the biodiversity of the area, it offers the plants the optimal conditions to grow healthy and strong. This farm is not only an ideal place to produce coffee, but also an example of how respect for nature and working in harmony with the environment can result in superior quality coffee, which expresses the best of the Querocotillo region.
RECIPE:
In V60, add 12 g of coffee with medium coarse grind and pour water at 94ºC in several pulses: 50g + 50g + 100g (200g of water in total). Total extraction time ~2:00 min.
